    I notice that my starter double in size but after awhile it shrinks back to the original size. Is that normal? Also, I have read recipes that say it must float, mine doesn't float.

      I usually stir it before using. Water in the bottom or on top is quite normal.

    Hello Mary I’m so glad I found your channel. I am a beginner with sourdough. This is a no hassle recipe. Ferment overnight or bake same day. No stretch and fold. Just perfect!     Mary my starter hasn't been feed in a month and I leave it in the fridge. Is it necessary to feed your starter a day or two before making the crackers?

    If I just had some SUN up here on this hill! We've always lived high up on a hill in these Appalachian mountains and there are so many trees there's only so much sunshine that can get through. I can't grow a lot but I do love fresh tomatoes! Hubby has a trick for that... containers that can be moved around. lol. Don't get me wrong, I am so BLESSED to have a paid for home on the hill in the mountains. God is SO GOOD. :)

    I love love your videos. Soon helpful & informative. I also milled my own grains for bread but didn't realize by sifting the hard white flour it could be your all purpose flour.     I've been making all my own bread products as well as baked goods!! I mill my own flour, and it is a game changer!! I've found healthy recipes for homemade barbecue sauce, and my boyfriend makes homemade marinades if we're having wings. I also make my own vanilla extract. The initial process takes time as the longer you let it sit and steep, the more robust the flavor is, but it's worth it if you bake a lot like I do.

    I found that I can use live kefir grains to make my own buttermilk, my own cheese with it, my own yogurt, my own starters that are sourdough taste . All this from my forever source of fermented kefir milk. I have a kitchen aid mill attachment for milling but I need to advance. I’m looking for an affordable mill now. I have an electric sifter and am anxious to start. I can and dehydrate everything but fruit because I have an aversion to the taste of sweet. I’m learning a lot from you. I have a lot of kefir whey that I use as a liquid for baking and for the liquid in my masa. Milled cornmeal. Almost anything I cook I use my Whey in it.

    I make most of the things on your list from scratch at home too. I also make milk kefir and water kefir. I make my own seasoning mixes such as Italian seasoning, taco seasoning and poultry seasoning, and onion soup mix. I like making my own because of the long unneeded ingredients that are found in store bought. I have many allergies and started making these at home for my health. Take care.

    I have an old dog officially in hospice. All she eats these days is gruel. I make it like a thin cream of wheat using fresh ground hard white wheat and some minced cooked fresh chicken. Of course it breaks my heart that she is so sick, but I appreciate no longer buying dog food at the grocery store! She’s actually doing very well on home made gruel.

    No more store buy for me: Mayo, mustard, bread, pickles, pancakes/waffles, broth, dog treats (dehydrate sweet potatoes), dog food, blueberries, strawberries, cooking herbs, soap, deodorant, shampoo, wound salves, no salad dressings for 30 years, granola, cookies, quiche, pie shells, yogurt sometimes with raw milk, no fertilizers, soil amendments, few veggie starts. The list keeps growing. I love DIY.

    I loved this one! Thank uuuu! So I want to make my own yogurt from my fresh milk, but I’m milling grains also and we have an Azure drop in Floyd VA that I go to once a month. I want to make tortillas and I’m also making salsa and freeze drying it. Well I freeze dry everything girl! And love it all. I wish u were close to me but idk if u r. I’m near Fancy Gap Va but just over the line n Mt. Airy. I want to watch ur vids on the stuff I don’t make yet so thank you for the inspiration!! If u live near then u should try the Azure drop so I can meet u! I would def recognize u if I saw u there. I know this is a scary world and internet can be scary but I am not scary. I’m just a girl like u trying to do the best thing for myself and family. Hugs lady!

    Why don’t you just start another jar using the discard, and then feed it? I’ve never done this before so it just seems odd to throw away part of the product that is still growing.

      The part you take out is essentially flour and water. Also, the bacteria and yeast won't be at optimal levels yet. You don't have to throw it away. Feed it to chickens, or add it in to a recipe you are making so it doesn't go to waste. The reason you take some out is that you have to feed the starter at least as much as is in the jar. If you never take any out at first, the jars will just keep overflowing and the bacteria and yeast will never get to a point to make a good strong and mature starter. You only take out a little and once the starter is active you never discard starter again.

    As a society we really need to teach our young ones this principle of self reliance! I wasn’t taught this at an early age but wish I was, trying to teach my kids that cooking and gardening are life skills they will NEVER outgrow. Great video, I love your content.     Hello love your videos because of your videos I now have a sourdough starter and loving it. I don’t buy bread and English muffins anymore.working on the flat breads yet. I make my own salsa also and can vegetables and bone broth. You are so right everything does taste better. The next two things I would like to try will be to make my own mayo and yogurt.     I buy local raw cow’s milk and don’t buy any more store-bought but home-make my own yogurt, cottage cheese, cheddar cheese, mozzarella cheese, buttermilk, evaporated milk for my favorite chocolate pudding, several flavors of ice cream, and butter, labneh cream cheese; and next I will try making Parmesan cheese, we have chickens so don’t buy eggs anymore. I’m building up my experience of fresh milled sourdough bread. Really like your channel!

    Ok Mary please Help!!! I have used your recipe over and over very successfully and shared it and started many on this sourdough journey. But now today…. I had a opps bread!!!. It went WAY over the 10 hours overnight rise went about 12-13 hours and grew huge. I wasn’t sure what to do but went ahead with the 2hour refrigeration and baked it. It was quite a bit flatter after the bake What should I have done to correct the over proofing of it?? Thank you and our Lord Gods continued blessings on you and your family!!!!

      This time of year I typically shave 1-2 hours off of my proofing time and get my dough in the fridge much sooner. I have this problem so much in the summer. I forget and then it's super overproofed by the time I catch it. I hope that helps!
